Stewed Chicken with Chestnuts in Pot

Ingredients:

  • Fresh Chestnuts
1 lb
  • Whole Chicken
1 (about 2 catties)
Seasonings:

  • Garlic
4 cloves
  • Ginger
6 slices
  • Hua Diao Wine
2 tbsp
  • Sugar
1 tsp
  • Light Soy Sauce
2 tbsp
  • Pinch of Chicken Powder
  • Dash of Salt, Corn Flour and Cooking Oil
  • Some Spring Onion
Stewed Chicken with Chestnuts
Preparation:

  1. Boil water with your 22cm Round French Oven. Put the chestnuts in when the water boils. When steam starts coming from the French Oven's side, turn off the heat and cover for two to three minutes.
  2. Remove the chestnut shells and skin. Set aside.
  3. Rinse the chicken and chop it into pieces. Set aside.

Cooking Method:

  1. Heat the French Oven. Please note that the flame should not extend beyond the edge of the bottom of the French Oven.
  2. Once the French Oven is hot, turn to low heat. Add cooking oil. Sautée the ginger and garlic.
  3. Turn to medium heat and sautée the chicken. Add the Hua Diao wine and cover for a few minutes. When the chicken has fully absorbed the Hua Diao wine, add the chestnuts, sugar, light soy sauce and chicken powder. Stir fry for a few minutes. Add half a bowl of water. Close the lid and simmer on low heat for 15 minutes.
  4. Add the corn flour solution, spring onion and cooking oil. Cover for a while and serve in pot.
